I owe this recipe to the New Basics cook book. It was the only good recipe I ever found in it.
1/2 cup red wine vinegar
1/2 cup olive oil
6 large tomatoes
1.5 cups of tomato juice
3 eggs
2 red peppers
2 onions
2 shallots
2 cucumbers
pinch cayenne pepper
salt and pepper
basil to garnish
OK: basically stuff the whole lot in batches into a magimix. My magimix won’t hold the entire amount so I do it in bits and as it is done, I pour it into a big jug. Some people like their gazpacho really really fine and some people like it chunky. Some people put in bread crumbs. Some people garnish with chopped up peppers and tomatoes and cucumbers. Some people use a completely different recipe. The essentials are tomato, cucumber, peppers, onions. The rest is up to you. The only important thing is that it is served cold so refrigerate over night if possible.
