This is an amazing stuffing for chicken or turkey. Makes a change from bread stuffing (which is also great and for which there is another recipe on the list)
1 cup wild rice
4 cups water
1 tsp salt
3 Tablespoons butter
1 clove minced garlic
2 chopped onions
1/2 pound fresh mushrooms (use a variety if you can), sliced
three or four big spoons full of dried mushrooms (use a variety if you can)
1/4 cup of port (optional)
salt and pepper to taste
Combine the rice with the water and the salt.
Bring to a boil and reduce the heat and cover and simmer for 30 minutes.
Turn off the heat and let it stand for another 30 minutes.
Meanwhile, in a large pan, melt the butter and add the garlic and the onions.
Cover and cook over low heat for ten minutes, stirring occasionally.
Add the mushrooms and continue to cook, covered, for 15 minutes or so.
Stir occasionally and add more butter if it goes a bit dry.
Add the salt and pepper and port and then mix with the rice.
See if you can actually get some into the bird and not just straight into your mouth.
