If you have to use an egg yolk for something don’t throw away the white.  You can make these in the moment or freeze the white to make these later.  Somehow I end up with zillions of egg whites in the freezer so every once in a while I take them all out and make a monster batch of these.

Janet’s Macaroons

1 egg white
3 oz caster sugar
3 oz ground almonds

Mix this altogether in a bowl and, working quickly, roll into little 1 inch balls and put onto parchment paper. It gets sticky so you may need to wash your hands half way through.  Bake for 20 minutes or so at 160 degrees celcius. 

To make Toddy’s coconut treats, substitute the ground almonds with dessicated coconut (get the unsweetened kind).  If you have a little of both (or any other ground nuts for that matter) use a mixture.
