Ingredients

4 oz cream Cheese
1/2 c white sugar + 2 Tbsp
1 c white flour
3 Tbsp cocoa powder
2 tsp baking powder
1/2 tsp salt
1 egg (beaten)
3/4 c milk
1/3 c veg oil (or melted butter)

1.  Beat cream cheese and 2 Tbs sugar until light and fluffy

2.  In separate bowl, stir together  flour, rest of sugar, cocoa, baking powder, salt

3.  Combine milk, egg, oil in a jug and pour into a well you have created in the dry ingredients.  JUST BLEND.  Do not over mix (ever, with muffins) batter will be lumpy

4.  Grease muffin tins, spoon 2 tbls of mix into bottom, drop 1 tsp of cream cheese mixture on top and then add more of the batter until muffin tins about 1/2-2/3 full.

5.  Bake 190 celcius for 20 mins and dust with icing sugar when cooled.

Yeild:  8 large muffins
