Beat together:
1/2 lb of butter
1 cup sugar
2 eggs
2.5 cups flour
1 teaspoon bicarb soda
1 teaspoon baking powder
3 black bananas, mashed*
1/4 cup of sour cream or full fat plain yoghurt
Pour all of this into a big loaf pan that is well buttered and bake at 180 for 1-1.25 hours until a knife comes out clean.
*If the bananas in your fruit bowl are going too brown for you to eat don’t throw them out! Wait a couple of days until they are really black and then peel them and put them in a bag and pop them in the freezer until you are ready to make this banana bread. If you prefer muffins, do the same mixture and pour into muffin tin instead, baking for 20 minutes.
