This recipe started life in a worthy Canadian woman’s kitchen. It went into my mother’s cook book called Fare For Friends which has become a Canadian best seller and was written by a group of friends to raise money for a shelter for battered women. It has surfaced in a recent edition of Canadian Living. It is still as good as I remember.
2.5 cups all purpose flour
1 tsp baking soda
1/2 tsp salt
1.25 cups of brown sugar
1/2 cup vegetable oil
1 egg
1 cup buttermilk
1 tsp vanilla
2 cups of rhubarb chopped into small pieces
Topping:
1/2 cup brown sugar
1 tablespoon butter, melted
1/2 tsp cinnamon
1. In a large bowl combine all the dry ingredients and then stir in the rhubarb
2. In a separate bowl, whisk together all of the wet ingredients
3. Stir the wet ingredients into the dry ingredients until just mixed together – do not over blend.
4. Spoon into greased muffin tins, sprinkle the topping on and bake at 350 (180) for 20 minutes or spoon into two 8×4 inch loaf pans, sprinkle the topping on and bake at 350 (180) for 45 minutes. In both cases, a skewer should come out cleanly when inserted.
Devour. Yum.
