Makes 8
5 eggs plus 5 egg yolks
125 g caster sugar
250 g chopped dark chocolate
250 g unsalted butter, cold and cubed
20 g fine corn meal (otherwise known as polenta)
40 g flour
1. grease 8 ramekin dishes and dust with cocoa powder. put in the fridge.
2. melt the chocolate and the butter together
3. whisk together the eggs, egg yolks and sugar
4. whisk the egg and sugar mixture into the chocolate and butter mixture
5. fold in the corn meal and flour
6. fill the ramekins 3/4 full and bake for about 10-15 minutes at 200 degrees. Test them after 10 minutes because it depends how big your ramekins are and how liquid you want the centres. You can cook them for longer if you like the centre more solid. Yum.
