Before you begin, take a packet of lemon or orange jelly and make it with 1/2 a pint of boiling water and only 1/2 set it.
Meanwhile, make the base by mixing together the following and pressing it into a spring form pan:
6 oz digestive biscuits (squashed)
3 oz butter (meltted)
3 oz caster sugar
When the jelly is 1/2 set, mix it up with:
8 oz full fat cream cheese
1/4 pint of whipping cream, whipped
juice and rind of a lemon
Pour this onto the base and put in fridge until completely set (a good few hours or overnight).
