This is a really good cake. You cannot go wrong because there is so much moisture in the apples. It is a bit of a drag to peel and core the apples – almost an excuse to buy one of those gadgets that peels andn cores the skewered apple.
200 g unsalted butter
250 g self raising flour
250 g caster sugar
50 g ground almonds (if you have them. if not, just use 50 g more flour)
1 tsp each of baking powder, cinammon, mixed spice
3 eggs
1 tsp vanilla extract
500 g cooking apples, peeled, cored, and cut into small pieces
spash of milk or water
Beat the butter until soft and add everything else, putting the apples in last. Add a splash of milk just to slacken the mix. Bake in a cheesecake pan for 50-60 minutes at 170 degrees celcius. Check when half way and if it is getting too brown, just cover it with a bit of parchment. Eat with whipped cream. Yum.
